Did I mention that I love cranberries?


I wish that I had better lighting to show you how truly beautiful these berries are. The color amazes me, and the beautiful pattern on the inside of the berries...they're so beautiful! This cranberry bread is lovely, and other than being loaded with sugar is really quite healthful! I used whole wheat flour (did I mention I use this finely ground Hungarian whole wheat that works well in place of regular flour?), and there's no oil in this bread! I omitted the nuts too, (all I had was pine nuts, and I had plans for those).

Cranberry Nut Bread
2 cups flour
1 cup sugar
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
3/4 cup orange juice
2 tablespoons vegetable oil
1 tablespoon grated orange peel
1 egg, well beaten
1 ½ cups cranberries
½ cup chopped nuts

Preheat oven to 350 degrees. Grease a loaf pan. Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, oil, orange peel and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan. Bake for 55 minutes or until a toothpick comes out clean. Cool on rack for 15 minutes. Remove from pan; cool completely. Makes 1 loaf.

Finals Fantasy


So I refrained from busting out the chocolate chips...so far, but I had to have something sweet! So I made myself this cranberry crumble which is delightful! To make it, mix cranberries, sugar, orange zest, orange juice, ginger, and a splash of balsamic vinegar. In a separate bowl, cut butter into flour, brown sugar, and oats until the crumbles are pea-sized or smaller. Put the crumble mixture atop the cranberry mixture and bake until browned sufficiently on top. Quite delicious.

*Sigh...*

So the local creamery (no prizes for guessing which one) makes their own cheese. I haven't had it yet, but any cheese that fresh, that close...it's gotta be good, right? Well, said creamery has its own grill as well. Are you thinking what I'm thinking? Grilled cheese!!! The creamery is kiddie corner from the building that houses the Psych and Speech Pathology clinics, and I had about 15 minutes and an empty belly, so I went across the street and ordered myself a sandwhich. What kind of cheese do you think they used? That's right, putrid, plastic, processed cheese, that's what. WHY?! That's what I asked myself as I ate it in all of it's smelly, sub-par state of being. Why would you purchase such substance, when you make your own?! The bread was gross too. I thought I would buy some cheese curds to console myself, but they only had a variety pack of cheese cubes available. I DON'T WANT MY CHEESE BACON FLAVORED! *sigh...* Don't worry about me though, I will be ok. I made my own grilled cheese sandwich on my trusty George Forman grill in a pita with muenster and turkey and it, well...they, I made several, and they made me feel better, and I intend to have another for lunch! You can't have enough cheese (or chocolate) during finals week. Although, actually you can, I think I gained like 5 pounds in the last two or three weeks of fall semester last year. I'm doing all in my power to refrain from even opening the bag of chocolate chips...
